Brewed using extremely pure well water, the recipe today remains faithful to the ingredients and methods used in previous centuries. Barbãr is a beautiful golden colour and has a generous head. The mead aroma immediately gives away the beer’s origins. When disturbed, the taste becomes more complex with milky notes but also citrus flavours (of preserved lemons) and spice (coriander, ginger). The first sip is broad but the acidity lends it a lovely balance whilst retaining its freshness. The aftertaste is smooth, flawless and spicy with a hint of liquorice and slightly sweet.
